PASTA AND THAT’S IT
The challenge was to convey through food
a certain taste and an authentic Italian atmosphere
Italians like, more than other peoples, to talk about what they eat, sometimes even more than the act of eating.
When 5 years ago we opened Burro e Salvia in the coolest neighborhood in London, the challenge was to convey through food – for us, fresh pasta – a certain taste and an authentic Italian atmosphere, that was able to dialogue with the London trends and with different clients and cultures.
Imagining the London Pastificio, we drew on our memory: the taste and the aesthetics of the house, the influences of design, the memories of the good things of mothers, aunts and grandmothers, and simple dishes, full of taverns and inns.
With fresh pasta we have identified the channel to communicate those values that awaken memories and emotions: creativity and passion, tradition and nostalgia, generosity and pride – values handed down between generations and which are basic of our culture and lifestyle too many envied.
